Day 46: Chins Wanging and Bush Tukka Platters!


G’day, mates! Welcome to Day 46 in the life of your friendly Whoop Whoop Walk About tour guide! Today, I thought I’d mix it up a bit—take a breather, you know? But starting tomorrow, it’s all systems go! So, I’ve donned the apron to whip up some bush tukka platters that will knock your socks off (but please, keep your boots on—it’s a bush experience, after all)!

What’s On the Grazing Plate Today?



Bush Tucker Delight: Kangaroo & Wattleseed Wraps

Ingredients:

For the Filling:

500g kangaroo fillet, thinly sliced

1 tablespoon olive oil

1 teaspoon native thyme (because who doesn’t love a bit of bush spice?)

Salt bush and pepper berries to taste

2 tablespoons wattle seed, ground

For the Wraps:

4 large spinach or collard greens (the tastier alternative to lettuce)

1 avocado, sliced

A handful of fresh bush herbs (like mint or lemon myrtle)

Lemon juice for a zesty kick

Instructions:

Get Sizzling: Heat the olive oil in a pan over medium heat. Toss in the kangaroo fillet slices, seasoning with salt, pepper, and native thyme. Cook until the kangaroo is just browned (don’t overdo it, or it’ll be tougher than a koala in a boxing match!).

Wattle it Up: Add the ground wattle seed to the pan and cook for an extra minute, letting those bushy flavours blend together like a good yarn around the campfire.

Wrap it Up: Lay out your greens and pile on the kangaroo mix, topped with avocado slices and fresh herbs. Drizzle with a splash of lemon juice—this isn’t just for flavour; it’ll have your taste buds dancing the jig!

Serve & Enjoy: Roll ‘em up, serve on a platter, and get ready for those chins to start wanging at your next tour!
